Yummy (and Healthy) Pancake Recipe

3/4 cup Steel Cut Oats 2 cups water 1/2 cup canned pumpkin puree 2 scoops whey protein vanilla 6 medium eggs - whole, raw 1/4 cup maple syrup 2 tsp pumpkin pie spice 1 tbs coconut

Place oats, water and pumpkin in bowl and microwave until cooked. Let cool add eggs, syrup, spice and protein. Place in "bullet" machine and whip until pancake consistency. Pour onto hot griddle prepared with coconut oil. Makes 12 servings.

133 calories, 5g fat, 2g saturated fat per serving.
