Quiche with a Twist

Today we had a phenomenal workout outside in the wonderful fresh air and sunshine. We then experienced a wonderful, healthy breakfast while being educated on the status of our skin and health. Our country bans only 11 toxins in our skin care products. The European Nation bans 1300. These are known cancer and DNA-altering toxins allowed every single day in our shampoo, lotion, creams, eye shadows, mascara, lipsticks etc. Everyday you probably put 200 or more toxins on your body every day before you walk out the door.
To make matter worse, there is not one thing being done in our legislation. We are causing our own skin cancer and manner other diseases. There is on company doing something about it. For more info about Beauty Counter, click here.

2 Sweet potatoes sliced and tossed in EVOO and PHSS (pink Himalayan Sea Salt) and Pepper.
14 eggs
1 red pepper
1 orange pepper
1 onion
1 small or 1/2 large zucchini
1 clove garlic
4 oz mozzarrella cheese, shredded
1-2 tomatoes
1 avocado
Layer the bottom and sides of a large baker with sweet potatoes. Don't be afraid to overlap them. Lay foil over entire bottom and lay something heavy on it. I used the insert to my crockpot. Bake at 350 for about 30 minutes. While that's baking, sautee garlic, peppers, onions and zucchini. When the "crust" is cooked but now brown, take out and layer veggies on top. Then the shredded cheese followed by the eggs that have been scrambled. Before placing in the oven, slice tomatoes and lay on top. Bake at 350 for 30ish minutes. Let cook, cut into squares and dollop with avocado slices. Enjoy.
